Extras and additional items are the two ways to put something on a proposal beyond your performance time and travel. Both are in the Basic step of the proposal builder, under Enhancements.
Extras
These are the standard add-ons you listed on your profile. There are thirteen:

When a client sends a request they can flag which extras they want, and those come through on the Event Details tab as Extras Requested. In the builder, each extra you add gets its own price field.
Additional items
For anything the thirteen don't cover. Select Add Item, give it an Item Name, and set a cost.
Use these for things specific to the booking — a second setup in another room, a rented item you're sourcing, an overnight stay for a distant venue, ceremony sound as a separate line from the reception.
How they appear to the client
The proposal shows a Service Breakdown table grouped as:

Then Deposit, Due Later, and Total Due.
Pricing them separately is the point
A client comparing two DJs at similar totals will pick the one whose proposal shows what the money buys. Rolling everything into your hourly rate hides the value of the lighting rig and the extra hour of setup. Breaking it out also gives the client something to adjust if the total is too high — they can drop a photobooth instead of dropping you.
If you can't supply something
The client's request form tells them extras may cost more or be unavailable. If you can't do one they asked for, leave it off the proposal and say so in the Note step. Don't add it at a price meant to discourage them.
Naming additional items
The client reads these with no context. "Ceremony sound — separate system, garden" works. "Extra 2" doesn't.
